Guatemala has a long history of producing coffee, and it continues to be a leader in the coffee industry. The country not only grows a lot of coffee — it was the tenth-highest coffee-producing country in 2015 — but much of the coffee grown in Guatemala is excellent, even by specialty-grade standards. Huehuetenango is the highest non-volcanic mountain range in Central America, and is known as one of the best coffee regions in Guatemala. This fine coffee is located in a part of the Huehuetenango (pronounced "weh-weh-ten-an-go") region that enjoys the rich volcanic soil necessary for premium organic coffee cultivation. Huehuetenango happens to be home to the rare and beautiful Resplendent Quetzal (Guatemala's national bird). It is a delightfully fruit-forward coffee that is sweet and well-balanced with a sparkling brightness, long finish and distinctive notes of strawberry and soft mocha. The co-op provides technical assistance to its members and has a facility that produces organic fertilizer to ensure the production of high quality coffee. Letting the true varietal character of this delicious Guatemalan coffee shine through, we use a delicate light roast to tease out sweetness without degrading the creamy smoothness and long finish that high-quality Guatemalan coffees are known for. Guatemala "Quetzal" features soft notes of butter, vanilla, apricot and nougat, along with a mild acidity. Huehuetenango has elevations between 1,500 and 2,000 meters and is known for producing fruit-forward coffees.
